  2. Observed: Cutting boards on cook prep coolers and salad prep cooler are scored. Required: Resurface or replace so surface is smooth and cleanable.
  3. Observed: Potato soup in plastic container cooling in ice bath however the ice bath was only surrounding the bottom 2 inches of soup. Required: Make sure when using the ice bath method the ice water is surrounding the outside of the container up to the top of the food level. Corrected by placing in metal larger pan and placing in ice bath.
